
Chimichurri Sauce
This vibrant, fresh, tasty concoction goes great with grilled chicken, steak, pasta, sandwiches, as a marinade, sauce, or pesto substitute.

Equipment
- Blender or food processor
Ingredients
- 1 bunch flat leaf parsley
- ½ bunch cilantro
- 8 cloves garlic coarsely chopped
- ¾ cup extra-virgin olive oil
- 1 tsp lemon juice about 1 wedge
- 1 tbsp shallots coarsely chopped
- 1 tsp dried oregano or 4 springs fresh oregano, optional
- 2 tsp ground cumin optional
- 1 tsp black peppercorns
- ½ tsp sea salt
- 1 pinch red pepper flakes or several dashes of hot sauce
Instructions
- Place parsley, cilantro, and any other fresh herbs blender or food processor. Feel free to include the stems. Pulse a few times to chop up larger chunks.
- Add remaining ingredients and blend on medium speed until smooth. Add a few teaspoons of water as needed to achieve desired consistency.
- Use to marinade chicken or beef for grilling, or reserve for serving as a sauce.
