
Aunt Elaine’s Divine Sour Cream Coffee Cake

This cake is great for breakfast, brunch or a festive dessert. It even gets better after a day or two so it is fine to make a day ahead of time – it you can resist eating it yourself!

Equipment
- 1 tube pan a Bundt or spring-form pan will also work
Ingredients
Dry Ingredients
- 2 to 2-1/4 cups flour
- 3 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
Topping
- 2-5 oz. semi-sweet chocolate chips
- 1 tsp cinnamon
- 1/4 to 1/3 cup sugar
Butter Mixture
- 1 cup sugar
- 2 sticks butter softened
- 3 eggs
- 1 cup sour cream
- 1 tsp vanilla
Instructions
Make Topping
- Combine topping ingredients (chocolate chips, cinnamon, and sugar) in a blender and pulse gently until chocolate chips are pulverized but still has recognizable chocolate chunks.
Prepare Batter
- Preheat oven to 350 degrees F.
- Grease the bottom of a tube pan, non-stick Bundt pan, or spring-form pan.
- In a large bowl, cream together sugar and butter.
- Mix in eggs and vanilla.
- Add 1/3 of dry mixture to butter mixture and then add 1/3 cup sour cream and mix well; repeat until all ingredients are mixed together.
Assemble Cake and Bake
- In prepared baking pan, evenly spread half of the batter then sprinkle with half of the topping mixture; repeat.
- Bake For 45 minutes and test for doneness.
- Cool completely and then gently tip from pan onto serving platter.
