This Little Goat Yucatán Bean Salad

Ingredients

  • 2 tbsp mayonnaise
  • juice of 2 limes about 3 tbsp fresh lime juice
  • 2 tbsp This Little Goat went to Yucatán sauce
  • 2 cups mixed canned, pre-cooked beans
  • 1 cup cherry tomatoes quartered
  • 1/2 red onion small dice
  • 1/4 cup pepitas pumpkin seeds, toasted
  • 1/4 cup chopped cilantro leaves
  • kosher salt, pepper, and additional This Little Goat sauce to taste

Instructions

  • In a large bowl, whisk together mayonnaise, lime juice and Yucatán sauce.
  • Add in the beans, tomatoes, red onion, pepitas, and cilantro.
  • Gently mix with a rubber spatula, being careful not to crush beans and tomatoes. Add more mayonnaise and Yucatán sauce if needed to dress as desired.
  • Refrigerate until ready to serve.

Notes

I stumbled across this gem in a supermarket meal kit. My family enjoyed it so much, we keep a bottle of This Little Goat went to Yucatán sauce just so we can make this salad. It whips up quickly with standard staple ingredients from the pantry and fridge. Use any beans you have available on hand, but a combination of sizes and white and black beans add color and interest.
