Super-yummy snack from college grill -- a buttery English muffin, gooey cheese, and a salty dog -- the perfect combination for midnight study break or any time!
1-2tbspButter, Unsalted(you can use salted, but it makes for a very salty finished product)
Instructions
Lightly toast English muffin
While English muffin is toasting
Pre-heat griddle or non-stick pan over medium-high heat
Cut the hot dog in half (into two shorter halves) and slice each dog mostly through the long way and butterfly
In pan, melt 1/2 tablespoon butter; place hot dog, cut sides down in pan and begin to brown; flip and brown other side
Finishing
Butter English muffin and place in pan butter side down; when golden brown, flip and continue to lightly toast; reduce heat to medium
Place cooked hot dog halves on top of English muffin
Quickly wet both sides of the cheese slice(s) under a tap; holding the edge or a corner of the slice, lightly touch each side of cheese slice to pan and then place on top of English muffin
Continue heating until cheese is lightly melted; assemble two halves and enjoy!

In college, I remember wandering down to the student-run grill for late-night study breaks. I was never a big fan of hot dog buns, and the crispy, buttery English muffin was a welcome stand-in. Throw on a slice or two of your favorite cheese and it's a college-era guilty pleasure....without a next-morning hangover.
